I use Eric5h5's method for doing this, but I'll just throw this out there: I can't exactly remember where I saw it (maybe one of the Unite10 videos?) but there was this sort of brilliant idea that you map all your guiTextures to one camera, then your game scene to another. Using Depth, the gui Camera textures *should* display the same across all devices, and you simply change the distance of the scene Camera when it detects a particular device. I've never tried this, but it sounds like at least the beginning of a pretty good strategy...
